Protein is one of the essential elements for life. Proteins play a structural and functional role in every cell in our bodies, such as skin, organs, muscles and bones.
Our bodies use amino acids as building blocks of proteins, which bind together to create peptide chains arranged and folded into specific structures. Of the 20 amino acids, 11 can be made by the body, classified as non-essential, and do not have to be supplied via our diets. The other nine amino acids are essential because they cannot be made by the body, so must be supplied via our diets.
Good source of protein
Each adult needs about 0.8 grams of protein per kilogram of body weight and can increase from 1.2 to 1.8 grams/kg for people who exercise. We can supplement protein for the body from foods of both animal and plant origin. In particular, dairy is an ideal protein as:
- It contains one of the highest levels of the nine essential amino acids.
- It is highly digestible, meaning per gram of protein more essential amino acids from dairy are available to the body than other protein sources
- Protein absorption is quick and stimulates lean muscle growth to a greater extent than other protein sources.
- Protein supplements from cow’s milk are very diverse.
Application of milk protein in food industry
As an excellent source of protein, milk protein is used a lot in the food industries; especially the need to supplement protein in nutritional products to support body building or for sports training.
Manufacturers can use milk protein concentrate to add to the formula for various products such as yogurt, nutrition bars, smoothies/protein drinks… and even cakes or candy.
One of the biggest advantages of milk protein is that it adds protein to the product without losing its original flavor and texture.
